We’re Back!

Sorry for the long delay :(   But, we have exciting news to share, and it will keep us busy a lot for the blog :)

We joined a CSA, also called a farm share, which means that local crops = we bought a share of the harvest for the year for veggies and fruits.  This means each week for 25 weeks, we get to pick up a bunch of veggies (fruits are only 12 weeks and haven’t started yet).

We’re hoping to cook more and to try more exciting things, since you CAN swap at the pickup location, but I want to try all the things I can get.

This week, we got 8 items.

Here’s a breakdown:

L- R: Curly Kale, Red Lettuce

L- R: Tatsoi, Baby Bok Choy, Lettuce Mix

Exciting right?!?!

So, you may know about some of these veggies and maybe you don’t.  But, when we use them, we’re going to document it all so we can show you exactly what they are, and how we used them :)   Tonight, we’re making baby bok choy and egg pizza, with some of the scallions and garlic, with almond oil as the sautee base…. I think it’s going to be delightful.  We’ll let you know tomorrow!

 

Ratatouille

Ratatouille is a dish of stewed vegetables, which can be served in a casserole type form. There are a couple of ways of making it, the way we made it was by layering it and baking it. We used a stoneware baking dish, and it turned out very tasty. You can eat it as a meal, or as a side dish. You can also use a number of different vegetables. We ended up using eggplant, tomato, cucumber, onion, and green peppers, all of which we obtained fresh the day before from Ashley’s dad’s garden.

Home made Pasta

Hi, welcome back, us! Sorry we haven’t been posting for the last month; things got very busy for us, but we will hopefully be able to be back now, posting every week for you to enjoy. Hope everyone had a good August, and happy September :)

Pasta is great. It comes in various sizes and shapes and you can use it for just about any type of meal. It is also easy to make your own, and it tastes even better than the store bought kind! It does require a pasta roller, which is $25-$40. I would also recommend getting an electronic crank, to avoid having to do any physical labor yourself. That can be another $40. So it is an investment, but once you get that, it requires very little to make good pasta.

Buttermilk Pancakes

Pancakes are great. When cooked right, they are fluffy and moist and delicious. But it can be hard to cook a pancake right, without the proper recipe. Too often when making or ordering pancakes, you end up with a thin dense cake that is not so great to eat. Never fear, we have the recipe for you. This comes from AllRecipies.com, and it has been our go-to pancake recipe since we discovered it. We’ll also give you a shortcut for buttermilk, if you don’t have any handy, although it is definitely better with actual buttermilk.

Chicken Enchiladas

Enchiladas, like most Mexican food, is pretty delicious. They are also fairly easy, which I like. This recipe we found from Simply Recipe’s (http://simplyrecipes.com/recipes/moms_chicken_enchiladas-print/) and they turned out great.

The only caveat is that I’m not sure the exact amounts of “chili powder” we used, because we tend to just make our own to taste for each meal. But, as long as you keep trying the sauce until it tastes like you want it, you should be fine. We also made some minor modifications to the meal, so away we go.
